Gonzales Food Market Beef Ribs

2 to 3 pounds beef short ribs

3 tbls GFM seasoning rub or dry rub of your own

 

Generously apply dry rub to ribs.  Place ribs in metal pan inside pit or smoker.  Smoke for 3 hours.  The ribs will soon fall off the rib and the grease in the pan will work to crisp the meat.  Be sure to turn the meat often.  GFM smokes over a combination of mesquite and oak at a temperature of 285 to 350 degrees.

 

 

 

Gonzales Food Market Cheezy Potatoes

8 whole baked potatoes

1 large bell pepper

1 small  onion (diced)

1 or 2 celery stalks (optional)

1/2 lb of lean bacon

1/2 lb easy melt American cheese

1/2 lb easy melt Jalepeno cheese

1/2 cup milk

1 whole stick butter melted

 

Bake 8 large potatoes until done, then cube.  Fry bacon, crumble and save drippings. To drippings add melted butter, bell pepper, onion, celery  and sauté.  Add milk and cheeses to sauté mixture and slowly simmer until cheese is melted.  Pour mixture over baked potatoes, sprinkle w/ bacon crumbles and mix thoroughly.  Enjoy.
